Bhakti Chai Vegetable Curry


Yields: 6 servings /// Time: 45 minutes

  • 16 oz (1 bottle) Original Bhakti Chai Ready To Drink
  • 4 cups okra, chopped
  • 2 zucchini, sliced into rounds
  • 2 cups carrots, sliced into rounds
  • 2 cups mushrooms, quartered
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 lime, juiced
  • 2 tsp curry powder
  • 1 tsp sea salt

Heat pan over high heat until hot. Add onions and garlic. Stir occasionally. When onions start to stick to the pan and become fragrant, add half a bottle of Bhakti Chai, curry powder, okra, carrots and lime juice. Stir well. Cook for about 7 to 10 minutes, stirring occasionally. Then add remaining ingredients. Cook for another 10 minutes or until vegetables reach your desired consistency. Adjust seasonings if necessary. I added some chili powder for extra heat. Serve warm over your favorite grain and enjoy!
